Cheesy Zucchini, with spicy olive oil and melted Asiago is a quick and delicious way to serve a side vegetable.

Ingredients
3medium zucchini
2TbspChipolte olive oil - or use regular olive oil and sprinkle with cayenne pepper
1/3cupAsigo cheese
salt and freshly ground pepper to taste
Instructions
Preheat the oven to 350 ℉. Line a ridge baking pan with parchment paper.
Cut the zucchini in half lengthwise and place on the baking sheet. Drizzle on the olive oil and then spread it out using a silicon basting/pastry brush. Add salt and freshly ground pepper to taste.
Bake in the oven for about 15 minutes or until the zucchini is starting to soften.
Remove the pan from the oven and then sprinkle the zucchini with the Asiago cheese. Put it back in the oven and continue to bake for another 5 minutes.
