Cheesy Zucchini

Cheesy Zucchini, with spicy olive oil and melted Asiago is a quick and delicious way to serve a side vegetable.

Ingredients

  • 3 medium zucchini
  • 2 Tbsp Chipolte olive oil - or use regular olive oil and sprinkle with cayenne pepper
  • 1/3 cup Asigo cheese
  • salt and freshly ground pepper to taste

Instructions

  • Preheat the oven to 350 ℉. Line a ridge baking pan with parchment paper.
  • Cut the zucchini in half lengthwise and place on the baking sheet. Drizzle on the olive oil and then spread it out using a silicon basting/pastry brush. Add salt and freshly ground pepper to taste.
  • Bake in the oven for about 15 minutes or until the zucchini is starting to soften.
  • Remove the pan from the oven and then sprinkle the zucchini with the Asiago cheese. Put it back in the oven and continue to bake for another 5 minutes.
