Sweet Potato & Pear Soup

The Sweet Potato & Pear Soup is quite easy to make, but with a hearty bread could easily be a main course soup.

Ingredients

  • t tbsp butter
  • 1 onion - red or white, chopped
  • 1 carrot - chopped
  • 1/4 cup celery - chopped
  • 3 sweet potatoes - peeled and diced
  • 3 pears - peeled, cored, and diced
  • 1 tsp paprika
  • 1/2 tsp thyme - or 1/2 tbsp fresh
  • 4 cups chicken stock
  • 1 tsp salt
  • 1 cup water
  • 1/3 cup whipping cream
  • 2 tsp maple syrup
  • 3 tsp lime juice
  • 1 dash black pepper - freshly ground

Instructions

  • Peel and dice the sweet potatoes.
  • In a pot, heat butter on medium heat. Add onion, carrot and celery and sautée for 1 minute. Add sweet potatoes, pear and thyme and sautée for about 2 minutes.
  • Add paprika, chicken broth, salt and water. Bring to a boil and simmer for 15 minutes or until sweet potato is soft.

  • Purée in blender or food processor in batches (or with an immersion blender) until smooth. If you are using a blender, do not fill the blender more than half full and put your hand on the top to hold it on. If it is too full and you start to blend it, the top can be pushed off and hot soup will wind up everywhere!
  • Return to pot. Add cream, maple syrup and lime juice. Simmer for 5 minutes. Season to taste with salt and pepper adding more syrup or lime juice as needed.
