1tbspolive oil
2zucchini - cut into bite-sized pieces
1clovegarlic - minced
1/4tsporegano
1/2tspsalt
1/8tsphot pepper flakes - (or to taste)
1pintcherry tomatoes - cut in half
1bell pepper - seeded and cut into bite-sized pieces
1pinchwhite sugar
1tbspfresh basil - chopped
2tspred wine vinegar
Instructions
Heat oil over medium heat in a frying pan. Sauté zucchini, garlic, pepper, oregano, salt and hot pepper flakes until just softened. Add tomatoes and sugar; cook until tomatoes are starting to shrivel. Stir in fresh basil and vinegar.
