2sweet potatoes - choose potatoes that are an even thickness through the middle
1/4chipotle olive oil - or use regular olive oil plus 1/2 tsp cayenne pepper or a dash of Tobasco sauce

Instructions
Preheat the oven to 375F (190C).
Wash and peel the sweet potatoes. Slice them into rounds about 1/2" (1.5cm) wide. Put them in a bowl and add the chipotle olive oil. Mix thoroughly and then lift out the sweet potato slices and place them on a cookie sheet with a raised edge, lined with parchment paper.
Sprinkle them with cinnamon and freshly-ground pepper. Bake about 20-25 minutes, or until done, turning the slices every 8 minutes or so.
