Sweet potatoes and heat go hand in hand together. This simple preparation for Roasted Sweet Potato Slices goes well with both roasted or grilled meats or vegetables.
In the winter I will roast these in the oven, but come summer they are on the barbecue in a vegetable wok.

Roasted Sweet Potato Slices
Ingredients
- 2 sweet potatoes - choose potatoes that are an even thickness through the middle
- 1/4 chipotle olive oil - or use regular olive oil plus 1/2 tsp cayenne pepper or a dash of Tobasco sauce
- 1 pinch cinnamon
Instructions
- Preheat the oven to 375F (190C).
- Wash and peel the sweet potatoes. Slice them into rounds about 1/2" (1.5cm) wide. Put them in a bowl and add the chipotle olive oil. Mix thoroughly and then lift out the sweet potato slices and place them on a cookie sheet with a raised edge, lined with parchment paper.
- Sprinkle them with cinnamon and freshly-ground pepper. Bake about 20-25 minutes, or until done, turning the slices every 8 minutes or so.
