Carrot Brownies

Now, don’t go expecting chocolate in this recipe. 

Carrot Brownies is a carrot cake like square that is made in the same fashion as brownies.

There may not be any cocoa or chocolate in this square, but the flavour of the carrot mixture and the orange icing is delicious.

Ingredients

Square Ingredients

• ¼ cup plus 2 tbsp butter
• 1 cup brown sugar
• 1 large egg
• 1 tsp vanilla
• 1 cup all purpose flour
• 1 tsp baking powder
• ¾ cup grated carrots
• ¼ cup raisins

Orange Icing Ingredients

• 1 ½ cups icing sugar
• 1 tsp vanilla
• 1 tbsp grated orange peel
• 1 to 2 tbsp orange juice

Instructions

Square Directions

• Grease 8 inch square pyrex dish. Preheat oven 350 ℉.
• Melt the butter in a bowl in the microwave (alternatively you can melt it in a saucepan on the stove). Stir in sugar, add egg and vanilla. Stir until well blended. Stir in flour and baking powder. Fold in carrots and raisins. Spread batter evenly in pan.
• Bake 20-25 min Test with a toothpick or cake tester. Do not over bake.
  
• Ice when warm with orange icing
  

Orange Icing Directions

• Mix 1 ½ tbsp of soft butter with 1 ½ cups of icing sugar. Add 1 tsp vanilla, 1 tbsp of grated orange peel. Add enough orange juice to make a nice consistency.
