Chocolate Brownie Cookies
These rich chocolate cookies with decadent fruit mixins are a real treat!
Ingredients
- 2 cups white sugar
- 1 cup butter - softened
- 2 eggs - large
- 2 tsp vanilla extract
- 2 cups flour
- 3/4 cup cocoa powder
- 1 1/2 tsp baking soda
- 3/4 cup dried blueberries
- 3/4 cup dried cherries
Instructions
- Preheat the oven to 350 F (175 C)
- Halve the dried cherries, place in glass bowl with dried blueberries, cover with boiling water, let stand.
- Cream the butter and sugar, beat in eggs and vanilla.
- Beat in baking soda, then add flour and cocoa powder, mix fully.
- Drain dried cherries and blueberries and add to the mixture.
- Drop by rounded teaspoons on to ungreased cookie sheets
- Bake 8-10 minutes, until edges are set and the cookies are losing their shine. A gentle touch to the centre of the cookie should have limited give. Allow to sit for a minute, then remove to brown paper or parchment paper to cool.
