Do you ever find that you have some apples in the fridge, that may be getting a little soft? This is the perfect recipe for them or fresh from the orchard apples.
Apple Cake is so filled with apples, that the cake batter just holds them in place. It is a very moist cake which when topped with a Vanilla Glaze will serve as an everyday or company dessert.

Apple Cake
You can't argue with tasty apples in nice, warm cake!
Ingredients
- 1/2 cup butter - soft
- 1/4 tsp salt
- 1 cup white sugar
- 1 egg - beaten
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 4 apples - peeled, cored, and chopped
Vanilla Glaze
- 1/4 cup butter - softened
- 1 1/2 cup icing sugar
- 1 tsp vanilla extract
- 2 tbsp hot water
Instructions
- Preheat oven to 325F (150C).
- Grease an 8" x 8" square Pyrex dish with butter.
- Cream together butter, salt and sugar. Beat in the egg and mix well. Add dry ingredients (which have been mixed together) and mix well. Add chopped apple. Mixture is quite thick and very apple-ly. Spread evenly in dish.


- While still warm top with a vanilla glaze (see below).

Vanilla Glaze
- Melt butter in saucepan. Stir in the icing sugar and vanilla. Then add the water, 1 tbsp at a time, until glaze is of proper consistency.
