White Chocolate Chip Cookies for a Winter’s Day

Chocolate Chip cookies have always been one of my favourites, but these are made with white chocolate chips and I think they are even more delicious than the traditional ones.

The addition of the cranberries makes them pretty to look at and adds a nice flavour to them.

Ingredients

  • 1/2 cup unsalted butter - softened
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 1/2 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cup white chocolate chips
  • 1 cup dried cranberries

Instructions

  • Preheat oven to 350℉ (170℃).
  • In large bowl, using electric mixer or stand mixer on medium speed, beat butter and two sugars. Add egg and vanilla; beat until fluffy.
  • Measure flour, baking soda, and salt in a bowl and mix together. Gradually beat into butter mixture on low speed or by hand until just mixed. Stir in chocolate chips and cranberries.
  • Drop by rounded teaspoonfuls, two inches apart on ungreased cookie sheets. Bake 10 to 12 minutes, or until edges start to brown. Let rest about a minute, and then lift them to parchment paper and cool completely.
