Cinnamon Spice Saucy Cake

This Cinnamon Spice Saucy Cake performs magic and bakes the cake on top of the sauce!

This recipe is like many of the Pudding Cake recipes; you make a cake-like bottom and then pour a liquid-mixture over the top before baking. After baking, the cake is on top and there is either a sauce or pudding on the bottom.

Ingredients

Cake

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 cup brown sugar
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 3/4 cup raisins - soaked in hot water for 5 minutes and then drained
  • 1/2 cup milk
  • 1 tsp vanilla extract

Sauce

  • 1 cup brown sugar
  • 1/2 tsp nutmeg
  • 1 tsp cinnamon
  • 1/3 cup butter
  • 2 cups boiling water
  • 1 tsp vanilla extract

Instructions

Cake

  • Preheat the oven to 375 F (190 C).
  • Grease an 8" square Pyrex baking dish. Combine flour, baking powder, sugar, cinnamon, salt and raisins. Stir in milk and vanilla. Spread evenly onto the bottom of the dish.

Sauce

  • Combine all ingredients, except vanilla, and stir until the butter is melted. Then stir in the vanilla. Pour the sauce over the cake mixture and bake, uncovered, for 30 – 35 minutes or until a cake tester (or toothpick) comes out clean when inserted in the centre of the cake.
