Roasted Sweet Potato Slices

Sweet potatoes and heat go hand in hand together.  This simple preparation for Roasted Sweet Potato Slices goes well with both roasted or grilled meats or vegetables.

In the winter I will roast these in the oven, but come summer they are on the barbecue in a vegetable wok.

Roasted Sweet Potato Slices

Ingredients

  • 2 sweet potatoes - choose potatoes that are an even thickness through the middle
  • 1/4 chipotle olive oil - or use regular olive oil plus 1/2 tsp cayenne pepper or a dash of Tobasco sauce
  • 1 pinch cinnamon

Instructions

  • Preheat the oven to 375F (190C).
  • Wash and peel the sweet potatoes. Slice them into rounds about 1/2" (1.5cm) wide. Put them in a bowl and add the chipotle olive oil. Mix thoroughly and then lift out the sweet potato slices and place them on a cookie sheet with a raised edge, lined with parchment paper.
  • Sprinkle them with cinnamon and freshly-ground pepper. Bake about 20-25 minutes, or until done, turning the slices every 8 minutes or so.
